My Mum's Egg and Bacon Pie

Sauté 1 white onion chopped with 6-8 rashers of chopped bacon and add this to 4 lightly beaten eggs, 100 g tasty cheese grated & 1/4 cup thick cream.

Add salt and pepper to taste.

Fold together and place in pie dish lined with 1 sheet of puff pastry.

Slice 2 tomatoes and place on top of the filling then cover with puff pastry. Brush with milk or egg yolk. Bake for about 40 mins 180°
